Custom WorkFlows/Issue tracking

I would like to extend the existing issue tracking list in sharepoint and add custom workflow around it. Basically we will add a custom field called status and depending on values set in the status field we will have to custom workflows set. More small tasks related to infopath and custom workflows would be given upon successful completion of this task. I would need detailed deployment instructions for the same.
