I can do this with two pic processors doing the measurement at the same time.. What is the resolution, what is the signal voltage and how do you want the data to be send to the computer? I can do this with C language...

I read your project, I can make it with an Arduino or STM Nucleo board using two ADC and you can read the value on laptop terminal with an serial monitor tool ( for example teraterminal,putty, coolterm , or directly on serial monitor of arduino IDE). good day, what is the aim of your project, ADC is present arduino uno and the sampling channel make it look like an oscilloscope or frequency counter, if it is what i suggested it is going to be interfaced with excel as display
