Apple Expert needed! Urgent (deleted) notes recovery

Hello, my partner has accidentally deleted her 'notes' from her iPad. How this happened... she went to 'iCloud' in the 'settings' menu and was turning things off as she didn't want things to sync. When she turned off Notes all of her notes were erased. These notes contained important information and we would like to recover them from the iPad. Also we are having trouble resetting her iCloud account password at the moment so this will need to be recovered (remotely) from the iPad itself. I plan to use TeamViewer with the Freelancer to resolve this. I will only hire you if I believe that you are confident you can fix this. potential for a tip if we receive the deleted notes. I want you to explain to me as well as you can where the data has gone and how you plan to achieve this. Please English speaking people only, there is no room for poor communication here.
