I have set up one such scenario for my client and I would strongly advice against installing OO server on the same machine where your other servers are installed except if it's a docker image. but since you have already red flagged the docker case, I would suggest you install it on a separate server and then we can integrate oo server with nextcloud for online editing cum storage of documents
