Wordpress Woocommerce SEO Speed Optimization (Pagespeed 90+ & Target A in GTMetrix) with Theme change & Homepage Redesign

Dear SEO / Speed Optimization expert,
We have a Wordpress Woocommerce digital store (with over 10,000 listings) on a dedicated server with great server specs. Currently our GTMetrix score is F and pagespeed score is less than 20 for all our product pages.
What is required to be done to achieve is this:
1)Theme change to a faster WP theme such as Soledad / Kadence / Astra and Front page design consistent with our earlier design.
2) Home page re-design required along with theme changes which should be responsive.
i) Refer attachments for home page design
ii) We need provision to update text's through out the page
iii) Rating row should be auto carousel with provision of 50 ratings boxes
iv) Category page needs to be created (Refer picture)
3) Speed Optimization to be carried out and 90+ Google Page speed & GTMetrix A to be achieved for : all our product listings pages and home page. This is most important.
4) We recently migrated to a new ded server but are still retaining our old server. First we like all these implementations to be carried on in our old server and on satisfaction, the same to be carried forth in our LIVE new server.
