Caching Issues And Site Speed Issues For A Woocommerce Site

I am currently running an Ecommerce website off Wordpress. The site is large but not that large to be giving me such big issues!
I have installed WP Rocket as my cache plugin.
But for whatever reason the plugin does not work! I have set it to all the required settings and what happens is that when the entire cache resets itself which can be lets say 24 hours - the cache does not rebuild and the site is as slow as a snail!
The only way to get the pages to recache is to manually click on them???
The only way to get this to work is for me to install a WP Rocket addon which stops automatic recaching - not a great idea at all as my site gets its stock updated every night!
From what I can see my server is 100% OK! I have my own dedicated server and all seems fine!
Its a serious wordpress caching issue which needs resolving asap!
