PDF data extraction

I require someone to mine data from a PDF building site plan.
The plan is made from 2 pdf's (right side and left side) and has shrub and tree names and quantities on the plan.
I require for this data to be extracted and placed into a table with each label and quantity in its own row.
The main shrub tally on the pdf is incorrect hence the requirement.
If this job goes well, this could lead to a regular work load, as I work with these plans every week.
