The projects I like doing best is automating manual tasks. Although I have quite some experience in VBA, my preference goes to VB.NET. I would propose a small executable (.exe program) with a folder selector (to select the folder containing all the documents) and a file selector (to select where to save the output file.) This program you should even be able to reuse in the future for other polls, if the structure of the documents stay the same.
