Alfresco openquote customisation

Need someone to guide me through how I can customise the Motorplus quote screens and help me understand the policy rating rules. See openquote dot appliedindustriallogic dot com I'm looking to create a prototype/demo site based on <[login to view URL]> I would like to add fields such as "date of birth", "date the driving test was passed" and other questions to my own hosted version of the above site. I would also like to modify the policy rating rules to reflect the modified question set. There will be more work following on from this
