I've been using the Unity engine for over 2 years and have experience with gameplay programming, UI, inputs, shaders, implementing plugins, data serialization and more. If you are looking for something similar to the gif, you want a script that generates a path and then places obstacles without obstructing the path. The customization options are going to be important here; what are the parameters you want to be able to tweak. I'm assuming things like the path width (the unobstructed width), an object list to pull from to place as obstacles. If you want the occasional path split, then path split frequency could be a parameter. Since pickups are placed on the path, it would make sense to handle pickups at the same time, and have frequency parameters for those.
