The servo motor will rotate the folds of the paper, which will cause the cube to either collapse or expand. Obviously the cube can't fold completely flat, as there is thickness to the servo motor. However if it can fold to at least 1/5 of its original height that will work. An arduino microcontroller will send the signals to the servo causing the cube to fold down to almost a square, or unfold to its original cube height.
